Cleaning up after Easter dinner


There were just 6 of us at dinner last night. I roasted a leg of lamb and potatoes, asparagas with hollandaise, mint jelly and corn. Of course, the family favourite, Pillsbury crescent rolls, were on the table. Those gawdawful things are always back by popular demand. For dessert this year we had home made pound cake with chocolate sauce and rhubarb preserves. My good friend was orphaned this year with her kids all off to in-laws, so she joined us and brought the cake. My middle son's in Mexico, mom's in hospital and eldest son's wife was sick with sinus stuff, so the 3 of them stayed home.

So, anybody got any good ideas for left-over lamb? It was a 6 pound roast, and half of it's left. I didn't make any gravy because the butcher trimmed off all of the fat, and the drippings were mostly gelatin.

By the way, Knorr Swiss makes a darn good hollandaise base. Just add butter and milk and bring to a boil! It doesn't taste like a powder-based sauce at all, and far easier than making the darn thing from scratch! Left-over sauce can be used for eggs Benedict the next morning.

I always make ham and bean soup, can you use lamb for soup?

I didn't get the bone from the butcher, but I could try making a stew, substitue chicken stock for lamb stock. Thanks, Tina!

You could always use the leftovers to make a nice Shepherd's Pie...

It was a good dinner, Moore. Everyone seemed to enjoy it, but these leftovers, lol. I'll try a shepherd's pie with half for tonight and a stew for freezing. Good thing I cooked it medium rare for last night so it'll withstand the extra cooking tonight.

I'll let you knwo how it turned out!

KaeEll and Moore, you guys are my idols! I seriously think that you two ladies need to create a cookbook, or an online blog about your domestic prowess in the kitchen!

Dang, I cooked my filets that came out wonderful, but I did manage to fill the house up with smoke while I was accomplishing that feat! I swear my poor dogs get stars in their eyes whenever I manage to turn the stove on in my house. That happens maybe a few times a month.

My stove even came with a DVD on how to use all the different features, it does everything but talk to me. Goodness knows I will be replacing the built-in microwave many more times than the stove. The old one went to a summer camp because I re-did my kitchen and I wanted a built-in one that was white. I don't think I have ever turned it on to the bake feature, I'm a convection bake addict, those few times I venture to open the oven door. I honestly think I probably clean it once a year, it just does not get used.

I definitely think that you two have all the makings of great cooking bloggers, with a potential for your own show on the food network......

Tess, that's very sweet of you! After all these years in the kitchen, cooking for up to 12 kids and adults at the table, you learn a trick or two. But there's a sign on my fridge that says "Karen's kitchen is closed due to illness. She is sick of cooking." I don't mind pulling out the big guns a few times a month, but every day, it's a chore I'd rather avoid.

Summer is the best time around here when the BBQ is pulled into position. I'll make a big salad with avacados and mangos, and my husband will grill up something or another. He's learned, finally, how to cook the different meats and fish on the grill, and I can sit in my adirondack chair, chardonnay in hand, and supervise.

Best thing happened a couple of weeks ago. A local kid put up a sign down the street advertising his new business of "Dog poop scooper". Yeah!!! We never got around to it that one weekend we had planned for some reason and now we don't have to. Don't you love enterprise?
