Food Dilemna


Okay, so I need to make roasted veggies (carrots, red potatoes and mushrooms) for a Christmas Dinner tonight, but I will also be cooking one of the hams because the church oven is not big enough for 3 hams...Will it be possible to cook them all at the same time. If not, if I cook the veggies sooner but then warmed them up later would it be okay? Help

Oh I always have that problem. (I need a double oven!)

You might be able to microwave the veggies after you roast them.

Shelly, ask around amongst some of the older gals in the group to see if anyone has a Sultan Hot Tray. They were the biggie wedding present from the seventies. I have a couple and couldn't manage without them because I now only have the one oven. I found mine at a second hand store when my mother wouldn't let me have hers, lol. I'd keep the ham warm on that while the roasted veggies cook.

Otherwise, no I wouldn't roast the ham and the veggies at the same time - ham is a lower temp, yes? But if you cooked the ham first and wrapped it in foil and wrapped that with oven mitts and a towel or two, it should stay warmish for the dinner. Then the veggies could go onto the table right out of the oven.

I find that veggies have to be cooked so high that it might dry out the meat

I had that problem when I tried to bake my mashed potatoes, baked them early, then tried to warm them up, but they were still cold

Yes, if you do them from scratch in the oven. I usually parboil them for a little first, then shove 'em in the oven with olive oil and a good blop of butter for 40 minutes at 375 until all golden and yummy.

On the other hand, when I make roasted potatoes from scratch in the oven, I preheat to 375, cut them up in relatively small pieces, coat with olive oil and a good sprinkle of coarse sea salt and roast uncovered for 45 minutes. Ditto carrots.

I pretty much went with what you did on the second...Though they are not really small, not bad but not super small...ANd i put rosemary on the taters. The carrots went in at 350 and have been in for 30 minutes, only cause I was baking something and stuck them in with...and just cranked it to 375 and through in the taters...I will put in mushrooms in like 20-25 minutes cause they don't take very long.

well, they called from church and said that they decided they didn't need a third ham afterall...so Yah I dont have to make it. And my veggies are done, burnt the carrots a little so I wont take them, but will save for me. The mushrooms smell oh so good. Like sauteed mushrooms in the oven. Thanks for the help ladies
