Chilly Saturday Morning


Hey all, boy is it chilly out today. What is everyone up too. Sometimes I think that if someone doesn't start one of these daily threads then we don't talk at all on the weekends.

I just got back from getting donuts. I know, totally bad but I don't feel so great and don't feel up to cooking. I really need to go get some groceries and more importantly some cereal for Jolene.

I need to go get my oil changed in my car, its about 6 months overdue because I never drive it. With Vinnie gone so often I usually drive his car.

I slept in until 9 this morning - stayed up pretty late last night. When I did get up, Ted had already shovelled a "pee path" in the back yard for the doggies but hasn't got the inspiration to do the front walkways and drive yet.

Today is shopping for the usual staples. The gang want meatballs and pasta tomorrow for dinner, so I'll make that later on today. It's the darn football game, so I imagine that they'll want to eat in front of the TV downstairs.

There has been a recall for Evenflo toddler seats, four different model numbers. Ted's outside right now taking the thing out of my car to see if one of them matches ours. Hope not! That's one pain in the neck I could do without.

Oh, Punksatawney (sp??) Phil went back to sleep. We all know what that means, huh? Six more weeks of this, guys. Six! Argh...

Morning!

We were supposed to get snow yesterday, but didn't thank goodness! I think once I go out to the grocery store, I'll go wash the Jeep. I FINALLY got Wyoming license plates for it, so I guess I'm official now.

Meatballs sound pretty good. I wish I had a crock pot. I usually buy a big frozen package and simmer them in the crockpot in a mixture of chili sauce and grape jelly. It sounds quite odd, but it's delicous.

I hope you don't have to go out and get a new carseat!

Shelly, I didn't cook breakfast either. Jackson had some cereal. LOL.

Not odd at all Jojo. In fact that is the best way to have them if you ask me. I remember my grandma Loudene would make them like that for special occasions. I was just so happy when she did. I think we're doing pitas and sandwiches tomorrow. I was going to make buffalo chicken dip, but last week's flu is still too fresh in my mins.

We are having a Super Bowl party with our church tomorrow and i am trying to decide on another dip to wow the crowd with. I already have a good recipe for the buffalo chicken dip...I am thinking of a spinach dip but I may go get a bread loaf thing and use it as the serving dish. Should be good that way huh.

Jojo, I have never heard of that meatball recipe! Sounds interesting!! My mother's Italian, so we always have had traditional home made meat balls and now they all expect that at least a few times a year. It's a pain in the ass.

Here's the recipe:

3 pounds lean ground pork (or have the butcher grind pork tenderloins just once, not twice as it toughens the meat)
4 or 5 eggs
a cup and half of mixed freshly grated Parmesan and Romano cheeses
a cup or so of fresh breadcrumbs
a bunch of fresh basil chopped fine

Mix all together, form meatballs, bake at 350 for 40 minutes. Oil the baking pan well with XV olive oil.

Then, in big pot, 3 large tins diced tomatoes, an onion, a couple crushed garlic cloves, chopped up celery leaves, a bit more basil. Dump in meatballs and simmer for 3 hours.

When ready, remove meatballs and keep warm. Then add two small jars of white pasta sauce (Classico), stir in, keep warm.

Serve over pasta, (usually linguine around here) with a meatball on the side. We have salad after the main course, usually a simple green one with cucumbers and romaine and home made vinaigrette.

Serves 8

Our car seat model was NOT on the recall list! Whew.

Shelly - super easy cheater's dip - low fat sour cream mixed with a package of Knorr Swiss cream of leek soup powder. Everybody loves it. Make at least 3 hours before though so the chunks of stuff mush up in the sour cream.

First I get a package of cream chease and let it get soft, cut into little chunks so it'll melt faster, then put it in a crock pot. Add a little bit of milk or whipping cream to give it a nice creamy texture. Then add shredded cheese. I usually use the sharp cheese by kraft, but not everyone likes sharp cheese as much as I do so any will work. Add that to your crock. Then add some green onions and stir (of course they can be left out if you know of kids who won't touch them). Add about a quarter cup of sour ceam, some salt and pepper.

THen I take a package of crab meat (unfortunately it's usually imitation because well Illinois isn't the best place to get crab meat lol) and shred it up and add it.


Let it cook in your crock for about an hour. Sometimes less if you let your cream cheese sit out long enough.

That usually fills a football shaped crock pot lol for bigger ones you might want to double it. I've also added petite shrimp in the past and green olives. I must admit when I included teh petite shrimp it was really really good lol.

Those meatballs sound delish Kae! I'm going to have to remember to pick those ingredients up at the store today! YUM!

Anybody got any good recipes that use gorgonzola cheese? I always pass it up at the store, and never have a good reason to buy it. Just nothing with seafood. I love gorgonzola.

Jess, that dip would sound good if it didn't have CRAB in it. LOL, I don't do seafood, of any kind. Maybe I can just leave the crab out, teehee.

And Aiden's going to be a year old already? WOW!

Jojo, Gorgonzola is delicious on its own with fresh pears and pecans. Makes a lovely dessert and is so easy! You can pour a little pear nectar on top if the pears aren't really juicy. Just peel and slice the pears on a plate, crumble up the cheese on top and toss on a few chopped up pecans. Yummy.

My friend, Christine, the lady on my Facebook friends list (not our Tina with no 'h"), loves Gorgonzola too. She serves it on a board with fresh apples and dates, sometimes pears in season. The sweetness of the fruits really goes well with that nip in the cheese. The Lebanese markets here always have the most wonderful fresh dates. Love, love, love!

There's an Italian version of that blue cheese (also ends in "zola", but name escapes me at the moment) that's as yummy. Try it too! Gambanzola, maybe?? It's a tiny bit creamier.

I LOVE, LOVE, LOVE pears and dates! Problem is, up here I can never find any good fresh ones. I really hate to buy the packaged ones. Bleh.

I'm going to have to look at some pears then today. That sounds like something yummy to eat when the kiddo goes to bed, and I can pull out some wine, sit on the couch and watch a good old movie.

I look up the Gambanzola.....I love trying new cheeses.

kae, that recipe sounds really good...do you roll your meatballs super big or are they the smaller cocktail size ones....I have always wanted to make my own meatballs but have never been brave enough. I need to try it though

Jess that dip sounds so good. I bought all the stuff for the chicken dip before i realized that we will be at a party ad it will need to stay warm. So now I am scrambling for a small crock pot to put it in. I suppose I could make double the recipe but that sounds like a whole heck of a lot of buffalo chicken dip...I may need to go visit wal mart
