Super Bowl Sunday


Ted's already glued to the TV, lol. I've banished myself to the den but will make a crock pot of chili soon. Shelly, what did you decide upon for munchies today?

Nick tore his ACL, a knee ligament, yesterday. He did it on the job, so he can't be laid off but has to see an orthopedic surgeon Tuesday and is on percocet for pain. *sigh* It's always something. I'd love to bring him home for the surgery but he wants to stay put and deal with it all there. At least the surgery is done with those little camera thingies, so no big fat incision, but still. Moore, does this sound mildly familiar?

Are you guys all watching the pre-game whoop-ups? BTW, Shelly, Ted is rooting for Arizona big time, in spite of the odds.

P.S. Last night we watched Mama Mia with Meryl Streep and Pierce Brosnan and absolutely loved every minute of it! We were so surprised at how much we actually did enjoy it! With the new HD TV, the colours were amazing and so was the acting and singing (except for Pierce, but he's forgiven for being so gorgeous, lol). What a romping good story. And Christine Baranski was hilarious too. Just loved it, and highly recommend it for any who haven't bothered yet. It was kind of a "yeah, okay, let's get it since there's nothing on television" decision. Who knew?

YES, we're rooting for Arizona!! Yay Ted... (claps) I know Shelly's with us on this too.

I had a ton of leftover chili from last week, so I froze it, in anticipation of today's game. Our son is coming over, and he loves chili. I also have a gazillion fresh jalapenos washed, halved, and seeded. They're about to be stuffed with cream cheese and bacon (the cheese isn't quite soft enough yet), and will be baked for a few minutes after my son gets here.

I'm also doing his Buffalo chicken tenders, and we'll have chips, etc.

Shelly -- what did you finally decide to take to your party?

Well I decided to go ahead and make the buffalo chicken dip even though someone else is making it. Reason is, one...someone actually requested it, and two. The other guy bakes his and then just lets it sit so it doesn't stay all melty the way it does in the crock pot, and three, he doesn't put bleu cheese in it. I firmly believe that it tastes more like buffalo chicken with the bleu cheese then it does without it.

And of course I am rooting for the Cards. I had my mom send me a t-shirt actually. Lets hope they continue to beat the odds. I mean, who would have thought that they would beat the Panthers or the Eagles. I say we have a chance.

It is such an easy recipe. I follow the one that asks you to use Franks Red Hot, which i kind of think is my fave anyways. But at this point I don't usually measure. Because my mini-crock holds more then the recipe makes so I just guestimate. And I use real chicken, not the canned stuff. That way you can season the chicken before you cook and add that much more flavor to the dip. It is a good dip.

8 oz. pkg. cream cheese, softened
1/2 cup blue cheese or ranch salad dressing
1/2 cup any flavor FRANK'S® REDHOT® Sauce
1/2 cup crumbled blue cheese or shredded mozzarella cheese
2 cans (9.75 oz. each) SWANSON® White Premium Chunk Chicken Breast in Water, drained

DIRECTIONS:

1.HEAT oven to 350°F. Place cream cheese into deep baking dish. Stir until smooth.
2.MIX in salad dressing, Frank's RedHot Sauce and cheese. Stir in chicken.
3.BAKE 20 min. or until mixture is heated through; stir. Garnish as desired. Serve with crackers or vegetables.

Tips
1.Microwave Directions: Prepare as above. Place in microwave-safe dish. Microwave, uncovered, on HIGH 5 min. until hot, stirring halfway through cooking.
2.Tips: You may substitute 2 cups shredded cooked chicken.
3.Slow Cooker Method: Combine ingredients as directed above. Place mixture into small slow cooker. Cover pot. Heat on HIGH setting for 1 1/2 hours until hot and bubbly or on LOW setting for 2 1/2 to 3 hours. Stir.
4.Tailgating Tip: Prepare dip ahead and place in heavy disposable foil pan. Place pan on grill and heat dip until hot and bubbly.

So I just got back from the store and actually bought a rotisserie chicken instead of chicken breasts. They are always full of flavor and I don't have to cook anything.

And I bought a bag of pizza rolls to throw in the oven when I get there. The guy whose house this is at made a good point about the game being at dinner time for us so I wanted something with sustenance too.

Now I am off to throw the fixins in the crock pot to get the cheeses all melted.

PS: I know what's available varies from area to area, but our store has Wing-Time, Buffalo wing sauce. That's what I use (medium strength which is the equivalent of hot in other sauces)...

YUM. That dip sounds delish!!!

Well, I hate to break from majority, but I'm a Steelers girl today. They, along with Cowboys, are one of my favorite teams, and as awesome as I think it is the Cards are playing in the big game, I will be waving a gold Terrible Towel today.

I have some 7 layer dip, smokies and potato skins waiting to be make, as I have some coworkers heading over today to watch the game.
I got the house all cleaned, and I'm just laying down and reading until I have to cook.

Kae, bummer about Nick's injury! Hope he feels well soon!

KaeEll, the fumes from those jalapenos must have blurred my vision when I read your post earlier today. POOR NICK!! I'm so sorry... Just yesterday we were celebrating because his job is still safe, and now he's injured. And I DO know how you feel about wanting to have him home for the surgery. Boy do I know! Tell him that all of your board buddies will be thinking about him on Tuesday. I hope he's taking something for pain in the meantime.

Jojo, you're the reigning "Queen of Dips", but I think that Shelly has just come forward with an impressive entry. You'd better hide that crown! LOL...

Oh poor Nick. And yes it is great that the surgery is less invasive. He will have smaller scars that way too. Not that men really care about scars but still. I will definitely pray for him this week. I have bad knees so can only imagine the pain...OUCH

And Jojo, no worries about not rooting for my Cards. If I wasn't from Phoenix I might not root for them either. Though I probably still would just because of the under dog factor.

Your menu sounds yummy. Love potato skins. I just finished melting everything up and its sitting in the crock pot waiting to get moved. I called Jim and asked to borrow his oven so I won't do the pizza bites until I get there.

Moore, I don't imagine it matters what kind of sauce you use. If you would use it on chicken then it would be good in the dip. I happen to love Franks, it has way too much sodium in it though.

Moore, maybe you need some "jalapeno goggles" like Paula Deen's "onion goggles." Have you seen those? So funny! She puts them on every time she cuts onions.

And, I'm hiding my dip queen crown RIGHT NOW. Hehe.

Shelly, if the Cardinals win, I won't be devastated, because in all honesty it would be great to see them win. So, I'm "kinda" cheering for them. But just a little bit. LOL.

And the referees hand the game to the Steelers. Let's spot them 7 more points at half time, give them 3 more chances to score a touchdown off a bull crap unsportsmanlike conduct call on Wilson and then forget what an incomplete pass is at the end of the game. Funny, referees handing the Steelers the Super Bowl, happened the same way last time when they screwed the Seahawks over.

So I'll just note it down for the records, Steelers in the Super Bowl, referees give the game away.

Brandon we all noticed that too. I am still proud of my Cardinals. I can't tell you guys how many people told me they didn't know who the Arizona Cardinals were. Well they all know now. And I still seriously love Kurt Warner.

Poor Lucy. My son, husband, and I just about scared the life out of our poor dog when Fitzpatrick ran the length of the field. The three of us jumped out of our seats, and began screaming our heads off, like absolute lunatics. Lucy must have thought the house was being invaded, but didn't know who she was supposed to attack! LOL...

Ted was seriously disappointed, and I did hear him yelling from the family room around 10 o'clock, so it must have been the Fitzpatrick moment.

I was upstairs watching the Don Cheadle movie that Bran recommended, Traitor. Good one, Brandon! I was sorry that the Jeff Daniels character got killed, but it was an intrigue and took my mind off being in banishment, away from the fireplace and all. Ted offered to trade places with me, but it was something he's had "reserved" for weeks and I figured he deserved the comfort. At least Chloe stayed with me. She wasn't too happy about Ted's cheers and boos either, lol.

You know what I hadn't noticed that I just noticed about this game.


So Adrian Wilson gets a personal foul on a FG try by the Steelers and the Steelers get a completely new set of downs.

James Harrison gets a personal foul on a punt by the Cardinals and the Steelers somehow get the ball but are pushed back on their starting field position.


How does that happen when it's the same thing but only a field goal versus a punt?

Okay.

The "incomplete pass" at the end of the game wasn't an "incomplete pass." They ruled Warner had an incomplete pass earlier,and the second one was a fumble, and looked nothing like the incomplete pass of earlier.

As for you other question, the announcers talked about why the Cards didn't get a fresh set of downs on the Harrison foul, and they did say there was a reason for it, but I can't remember what it was.

I have to disagree wholeheartedly that the refs handed the Steelers anything. Both teams busted their asses out there, and the Steelers played the slightly better game. Both teams played extremely well though.

I sorry Cards fans, somewhere inside I was hoping they'd pull it off, the sentimental part of me...but the black and gold part of me is ecstatic for my Steelers. I'm enjoying the victory.

And I need something to enjoy. Jackson got suspended for 2 days today for being uncontrollable at school again. He's already been suspended for a month from the Boys and Girls club, so I'm at my wits end. He threatended to kill people today with guns, and even though Jackson has trouble because of his tramautic brain injury connecting actions with consequences, its more than disturbing. He was diagnosed with ADHD, but we are all pretty certain he has far more severe mental issues than ADHD. I have a barrage of information being hurled at me with the community mental health programs, YES house programs, etc, and I'm afraid if I cry one more tear, the apartment will flood. I'm exhausted and scared to death, and feel like the bottom could fall out at any moment.

I'm not an entirely religious person, but if anyone has a moment to spare for a quick prayer for me and my son, it would be a million times appreciated.

Of course we'll say prayers for you AND Jackson. I know you'll get through this, but it has to be rough!

I'm not telling you anything that you don't already know, although your level of strength may be tapped out right now, but you need to take advantage of community programs to get another diagnosis of what may be going on. If it's any hope, sometimes these things can turn out to be more simple than imagined, such as a food allergy, or something that can be dealt with in conjunction with the ADHD.

Hang in there, and get someone else to take a look. A fresh eye can turn up all kinds of stuff that others didn't see.
