SFF, I had a daughter-in-law that was vegan, and she lived with us for several months. That was quite a challenge, but we did manage to come up with some delicious dishes that all of us enjoyed.
Next in line was the girl from Oz that lived here for a few months and she didn't eat any vegetables at all, except for a bit of corn. I think it was harder planning a balanced diet for her than it was for the vegan, LOL.

Wow, I have such respect for vegans. It's a struggle for me to just be a regular ol' vegetarian lol. I didn't really eat many vegetables at all when I was a meat eater. Actually, I think I really liked corn just like that girl from Oz lmao! Now, I'm really enjoying my veggies.
I'm also seriously enjoying my veggies these days, now that I am gluetin free.
Here's a really yummy green bean dish:
Saute a liberal amount of onions and garlic in butter (or olive oil if you're watching the cholesterol). When cooked add a half cup of chicken broth, and a nice dash of white wine (optional). Take a liberal amount of string green beans and throw into the mixture. Cover it, stirring frequently. When the green beans are cooked, firm, not mushy, remove from the heat. Take crumbled bacon and mix it in.
All the portions are really to your individual taste and the bacon and wine are optional, although they add an extra zest to the flavor.
This is delicious, and keeps really well in the fridge. I actually pick-up the green beans frozen at Trader Joe's, they have really great thin ones, that are so very tasty. I tried fresh ones on Easter, and they were great also.
My sister-in-law made if with Thanksgiving dinner, and I have been hooked ever since. I tend to have them with a piece of meat that I cook in my trusty George Foreman grill, or they are great mixed in with rice, the broth is great.
