Moore, how was your sausage dish?


So, how did it go? Did it turn out as well as you had hoped, and did everyone LOVE it? Was it worth the trouble?

We had a disappointment with the tortierres that were too heavily spiced and left a funny taste afterwards, but the leftovers were far better because Ted and I dumped ketchup all over them. The Buche de Noel was perfect and fantastic. The $24 foie gras was a ridiculous rip-off. Live and learn, eh?

Hey, guys!

I've been in bed with the flu for the past couple of days (my youngest gave it to my husband who then gave it to me), so I haven't felt like posting.

First of all, I have to say that I'm addicted to foie gras, but I'm sorry that yours didn't work out, KaeEll.

My tasso (spicy smoked pork tenderloin) actually worked out quite well... The funny thing is that I FINALLY heard back from the Inn at Biltmore, and they told me that they order theirs through Paul Prudhomme. Since this information arrived in my inbox on December 23rd (with no time left to order it), and since I had already smoked mine on December 21st, it was a little late in coming, but that's okay.

I have lots of tasso in my freezer (my hair smelled HORRIBLE after using the smoker, and I couldn't WAIT to get into the shower to shampoo), and will definitely use it. Everyone loved it.

I guess that I might go through this process again, but I'd like to find a more efficient way to smoke it. That was really the hardest part -- controlling the temperature in the smoker.

Okay, I'm out of here again. Not well... We did have a lovely Christmas, though, and I hope that all of you did too!

Moore, sorry to hear that you're sick. Me too. It's the price for running flat out on all cylinders for weeks on end, then when the relief of the holiday behind us sinks in, whap! Rest up and feel better.

aww Moore I am so glad that your dish turned out great, so sorry to hear that both you and kae have the nasty bug. I hope you guys get to feeling better soon. Moore have you tried any of that oregano oil that Kae suggested

No, I haven't tried any oregano oil... I probably should, but I'm on the mend now. I think...

Jojo, foie gras is a very fatty duck liver that is normally butter-tender because of its fat content. It's normally used to enrich other dishes, or can be used as an appetizer by slicing it, and barely sauteeing it so that the delicacy of the liver is tasted (not at all like the calves liver that you might be thinking of right now, which I also happen to love, by the way).

If done right, it's very tender and delicate.

(KaeEll, you're right. It's from too much running around. I was convinced that I would NOT get my daughter's and then my husband's bug, but I fell victim to it anyway. I hope you're beginning to feel better by now too...)

Foi Gras was banned in Chicago because of the way they treat the geese they get it from.

They Force feed the goose, with a tube down it's throat, really horrible!

Yes, it's definitely not an animal friendly dish to have. They force feed the geese in order to ensure that the liver is very fat.

I see that I wrote "duck" in my earlier post. Definitely another sign that I haven't been feeling well... A little better today, though.
