Lamb salad recipe, as promised...


Here's the recipe I promised...It's from the Real Simple magazine out this month. The pic looks delish, but again, I don't eat lamb. Enjoy!

Moroccan Lamb salad with carrots and mint
-------------------------------------------------------

-2 boneless lamb leg steaks (about 1 pound total, each 1 inch thick)
-1 tbsp olive oil
-2 cloves of garlic, chopped
-kosher salt and pepper
-1/3 cup of mayo
-2 tbsp fresh lemon juice
-1/4 tsp ground cinnamon
-1/8 tsp cayenne pepper
-1 pound carrots, peeled
-1/4 cup fresh mint sprigs
-1/4 cup golden raisins
-2 scallions, chopped

-Heat grille to medium. Rub the lamb with the oil and garlic and season with 1 tsp salt and 1/2 tsp pepper. Grille to desire doneness, 4-5 min per side for medium rare. Lest rest 5 minutes, then cut into bite size pieces.
-Meanwhile, in a large bowl, whisk together the mayo, lemon juice, cinnamon, cayenne and 1/2 tsp salt.
-Use a vegetable peeler to cut the carrots into long, thin strips. (In the pic in the mag, they look like fettucine noodles the way they've cut the carrots). Add the carrots, mint, raisins and scallions to the dressing and toss. Serve with the lamb.

Oh, wow! That sounds delicious, and right up our alley! Jim LOVES carrots, and we both love lamb, and we have an abundance of fresh mint growing, so this is the perfect combination.

Kae, I also emailed my friend today about the marinade you linked me yesterday, and she ran to Sobeys on her lunch break and picked me up a few bottles to try. Now I have even more reason to be excited for her visit this weekend!!

Oh great, Jojo! It's a very different taste, and not one we'd like to have two days in a row, but memorable. You'll see! Report back, okay? All around here love it, but nobody except me has the leftovers for lunch the next day. Trust..... :) It's a really unique flavour.

I always cook small portions anyway, so I won't have any leftovers, LOL. I can't cook a lot when it's just me and Jack, and he doesn't eat half the stuff I do anyway! Thanks agian for the suggestion!
