Yesterday at the crack of dawn, almost, I ventured off to an old part of town to the cheese factory, got some fresh, hot ricotta, freshly grated romano and parmesan cheeses and a big ball of caciocavallo cheese. This morning I launched into the making of the annual lasagnas - quell mess! Tonight there will just be a few of us at dinner, and the second pan of lasagna will go to Tony's freezer for another day.

I love lasagna. How I wish I lived closer to you. I have taken to making Manicotti. I have a pretty good cheese filling recipe but I think I want to try a meat one, and maybe a spinach one.
Anyways, sounds like a great dessert and lucky Tony.
LOL!! KaeEll, there's NO way to make lasagna without making a mess. But, it's all so worth it... Lucky Tony!
Shelly, do you use shells for your manicotti, or do you make crepes? I have a recipe that I've used for years that uses crepes (although they're stuffed with cheese and not the meat you're looking for), and they're SO tender!!
